I was watching Dead Man with johnny depp the other day on dvd. When I got to watching the deleted scenes I noticed the quality of film was considerably worse. I figured this is because they were using old fashioned black and white film and then polising it up digitally. I noticed the same on other dvd's outtakes such as back to the future , donnie darko etc.

This being the case I was wondering what software they used to acheive such high quality renderings from such a low grade original. Because presumably I could take Hi-8 footage and make it high quality in the same way.
