Default Dirt Bike Video Editing - slow motion help!

So I just upgraded to the Canon 60D and am excited to film with it.
My camera is mainly used photographing and filming dirt bikes, motocross etc.

I looking into filming another short rider promo and am looking for advice when it comes to slow motion. I have done a few before (with an HD camcorder) were the slow motion looks choppy. I use final cut express, so i'm hoping someone can help me and explain how I can achieve slow motion in this program that is crisp like in the below video example or if I should use a different program to edit entirely.

Any other tips you may have for filming fast motion would also be helpful if you have it.

    Thanks in advance!
