You mean the resultant video zoomes in, yes?
You use keyframes.
When you open the Pan/Crop window there's a timeline at the bottom (if you can't see it, move your cursor towards the bottom until it becomes a double-headed arrow and then click&drag up)
Place timeline cursor at the beginning and clik the "+" Icon to create a keyframe.
Move the cursor to where you want the clip zommed in and do your pan/crop. This will create another keyframe.
Frames in between will be interpolated - that is a smooth transition will be created.
Search manual and help for keyframes for more info.
BTW you do realise that zooming in on an image will esult in loss of quality and you may have problems with interlace, don't you?
