In Vegas 7... I havent been able to slowly increase or slowly decrease the volume of my audio at any point... can I do this/how?? Ex. If a song is playing, have it fade to a quieter volume and maybe fade back to normal...?

If you right click on the track (not the media in that track) go down to envelopes, and add volume. You can double click on the blue line that appears to add ponts where the volume changes and drag the line to your desired point.
