Hi Andrew. My response wasn't meant to be a tutorial, only a couple of hints of areas to look at. Trouble is it's much quicker for me to do than to explain!
There is very little out explaining ProType Titler as yet. You need to do what the rest of us are doing and play with it - though from a Vegas user's viewpoint it's not very intuitive. There are one or two tutorials around - the one on the Vegas site is very useful (IIRC it covers cascading)
As for the second title I strongly recommend you download the trial of Bluff Titler (outerspace software - just google). There are loads of examples built in and a vast gallery of examples posted by users. If you like it it's only about 35UKP
