which company performs better for video editing?
instead of a 2.5 intel pentium 4, would a 2.0 amd processor be a big drop off?

They say go for Intel.
It really depends on your computing habits actually, and of course your budget...
I'm really happy with my Athlon64.

I don't think hose two are related
Anyway, facts don't lie.
If you're video editing, you have two options over what to go for:
If you're going for a single core processor - go with the Pentium 4. They handle video encoding better. If you've got the cash to go Dual Core, go with the Athlon X2 over the Pentium D.

The AMD AM2 is out in June I believe, and the buzz is that it's pretty damn good. Intel have a new line coming out in July I think.
However, almost everything I've read about AMD vs INTEL talks about performance in games and the CPU's ability to multi-task. I've yet to see a review that really looks at them both from a video editing point of view. That would be an interesting read.
