How do I encode multiple audio tracks?

How do I encode multiple audio tracks?

Hi All,
Great site. I was hoping somebody here could save me a lot of time and tell me how to;
I would like to encode audio in seven languages onto a 20 minute video segment and be able to play it back on a pc, outputting the various audio tracks to different channels. Basically, it is an exhibit and you can wear headphones and select your language of choice in the auditorium.
