Default Grainy Pictures

I recently upgraded my PC specifically to allow me to edit video footage, including old analogue camcorder footage, and put it onto DVD.

I have been recording onto my hard drive through a Composite Video input, which seems to result in a slightly grainier recording than I would like, and more annoyingly, the picture seems to have fairly wide vertical lines on it which become noticeable when the recorded picture is panning.

Am I doing something wrong, or is this just the way that anologue tapes convert to digital ?
