One thing I'd do different is archive the AVI to DivX (or XviD) instead of the MPEG. You'll have less distortion creep in that way if you later need to recreate the MPEG.
IE -
AVI>MPEG adds distortion
AVI>DivX adds distortion
AVI>MPEG>DivX adds distortion twice. Then if you recreate the MPEG, you get the distortion a third time.
