Default enhancing picture quality

Can anyone tell me if it is possible to enhance picture quality through DV editing. I'm capturing with a Canopus ADVC100 from an analogue source.
I've tried capturing 30mins of video into AVI and also directly into Mpeg2 and burning DVD from there. I've tried using PowerVCRII to capture into different frame rates but none seem to produce very good quality. Although the original VHS source is high quality I can't get a very good result.
Generally the picture loses some sharpness and there is faint pixelation.
I'm running P4 2.8Ghz 1024 DDR. Any suggestions?

when you capture to avi, what codec are you using?

If you're not already, use the Canopus DV Codec.
