A "Newbie" Trying To Learn

I am just starting to capture VHS to make DVDs. This computer is dedicated to video capture and nothing else is running on it. Initially tried Pinnacle Studio 8. Had a few crashes many lost frames. Downloaded the latest updates and Studio 8 went completely unstable. Reinstalls didn't help. Reformatted and reinstalled XP and Ulead Studio 7. The capture now seems OK in MPEG format. Now trying to learn the Editing process.

Is it better to capture in AVI and later convert to MPEG?
