Minsh, the whole thing is being produced in HD but most countries are broadcasting it in SD.
I was involved in designing a couple of the OB studios' lighting and I remember reading that each game is covered by a minimum of sixteen, and a maximum of twenty four cameras, not including the visiting television "studios". In most of the vans, the Director has his choice of six feeds: Four are his choice of cameras, his final two feeds are offerings from a couple of sub-editors, one of which is just responsible for slo-mo and replays.
All the cameras are being continually recorded either on tape or, in the case of the slo-mos, hard drive. It's a good job that you're only seeing it in SD because on the HD monitors in television centre you can see that quite a few of the operators are having problems with focus.
I'm just glad that I don't "do" sport.
