Well there's camtasia studio. Not ideal though.
I'm not sure about the possibility of writing to disc as it streams. Have you checked the winamp plugins and the winamp forums?

UPDATE:
I've found this very nifty program designed specifically for ripping winamp streams... http://streamripper.sourceforge.net/
Only thing is that the stream files are saved as mp3 and have to be renamed to mp3. I have no idea how to do this... Anyone?
Also, what's a good avi to wmv converter?

Just manually rename the file. You might have to enable viewing of file extentions, mind.
In explorer, tools, folder options, view.
Why would you want to change avi to wmv?

I don't actually, I thought that Windows Movie Maker wouldn't be able to read avi, but it is...
Keeping on the subject, any programs that convert NSV to AVI or MPEG or WMV?

I have never once worked with NSV, but again, check the winamp forum if nobody here knows.

Ok... After spending some time on a few other forums, blogs and FAQ sites, it seems that the only way to convert NSV to a different format is to demux the NSV file, which from what I read means separating the sound from the video. Does anyone have a simplified description of how to do this? I lost myself trying to read the technical tidbits.
