I am using Ulead VS8. I can burn several movies onto a DVD RW in one session successfully. I think I should be able to add extra movies at a later date but so far the only way I can do this is to reinitialise the disc and burn both old and new together in one go. Is there a way to burn extra stuff onto a disc at a later date?

Unfortunately you can't do this with Video Studio 8. The software comes with a cut down version of DVD Movie Factory. However you can edit DVD RW disks using the full version of Movie Factory. You could always try the trial from Uleads website.
