Minimum operating temperature

I've seen on several (Mini DV) camcorders, such as the Canon ZR800, that the minimum operating temperature is 32 F degrees. A Canon rep told me that pretty much all of their products have that spec.

How important is it that I not use a camcorder in below-freezing weather? What would happen if I did?
