Well I guess this isnt fully analog, it has a usb port that I'm using on it. I have the s-video cable, but what do I use to get the audio off? Do I use a regular stereo to stereo cable and connect it into the a/v out jack?

Yes. Or sometimes the cameras come with a jack that will carry the video and the audio and splits out into the s-video and two standard stereo jacks.
But if you think you will get better quality from the S-Video than you would over USB then I think you'll be disappointed. i would suspect the USB would transfer the video data at the same data rate. Still, always worth a try.

Okay, so I just looked up the specs on your camera
1) You are correct in that you CAN transfer video or stills using USB (and I think this equal your s-video out transfer)
2) Your camera only supports mono, not stereo audio
