I guess it never occurred to me that while my 35mm camera has focus, aperture and shutter speed settings, my video camera only has focus and shutter speed.

Nonetheless, I was able to achieve the effect using the first tip in this thread (thanks!), although I think the better strategy is to buy a camera with a manual aperture control.
