I agree that the best time to do this is during the actual filming. Filming the subject against the background of a bright window usually results in the subject's face darkening to the point of non-recognition. Many cameras allow exposure/iris adjustments that will make the process easier.

But assuming you already have the footage, I think there are 2 options. One is to apply a mosaic or blur on the subject's face. This question has been covered many times before in these forums so have a search.

The second option would be to just use the audio portion of the footage. Remove the video and replace it with something creative. Titles perhaps, or other related footage.
