Have you defragged your disk? Fragmentation can be a cause of jerkiness. UVS8 is unlikely to be the problem. On capturing: yes, capture as .avi - if you're planning to author to DVD, then you'll need an authoring program that will convert the .avi to MPEG-2 etc.
